ROASTED THYME BUTTERNUT SQUASH

Ingredients

· 1 medium butternut squash
· 2 tbs olive oil
· salt and pepper to taste
· 1 tbsp fresh or 1 tsp dried thyme

Instructions

1) Preheat oven to 400 F.
2) Peel, deseed, and cube butternut squash.
3) Coat butternut squash with olive oil, salt, pepper, and thyme.
4) Evenly distribute butternut squash in baking sheet and cook for 15 minutes.
5) Remove squash from oven and toss around pan.
6) Place back in oven and cook until squash is soft, about another 15 minutes.
7) Let cool and enjoy
